#1 Taco Mexican Mini Pizzas

Pizza or Tacos? … Can’t decide between these two super tasty dishes? Don’t worry… you don’t have to! Create your taco pizza easily. Here’s how…

Forget the taco shell and replace it with your doughy pizza base. Roll out the dough ultra thin and cover it with sour cream. You could also try smoked chilli mayonnaise, which also tastes divine! Next, chop black olives, spring onions and avocado, then set aside for later.  Fry off some minced beef with salt and freshly ground pepper, green chillies and black beans. Drain any excess meat juices to stop your pizza base being soggy. Mix the beef, chillies and beans with the spring onions, avocado and black olives. Once mixed, add to the pizza base with a sprinkling of cheddar cheese. Cook and enjoy!

#2 Chicken Enchilada Style Pizza

Another traditional Mexican dish, enchiladas are layers of baked goodness smothered and covered in a red chilli sauce. There’s nothing to say you can’t spice up your pizzas and combine the flavours of a Mexican favourite with the Italian number 1! So, here’s our suggestion…

As always, begin with rolling out your dough and set aside ready to cover with lashings of toppings. Slice some chillies (either leaving the seeds or removing them – whichever you prefer), and add them to the passata with a heap of fresh coriander, oregano, freshly ground pepper and a pinch of salt. In a frying pan, stir fry small diced pieces of chicken, white onion, poblano peppers, finely chopped green chillies and garlic, then add to the passata mixture once cooked. Spread your enchilada filling over your pizza base and cover with Monterey Jack cheese or mozzarella. Bake and dig in!

Mexican and Italian goodness!

Your flour tortilla is going to act as your dough pizza base. Begin by making your tomato base mixture. Grab a bowl and mix passata, finely chopped garlic and chillies, a pinch of salt and some freshly ground pepper. Spread some Gran Luchito Smoked Chilli Paste on the tortilla, then spread the tomato base mixture on top. Add slices of pepperoni, mozzarella and fresh basil leaves. Repeat this step 1 to 2 more times. To finish, add one last tortilla to the top to seal the pizzadilla, then grate cheddar cheese over the top to give a crispy finish. Bake, slice and tuck in to a double hit, cheesy chilli treat.

#4 Barbecue Chicken Flatbread

With another alternative to the standard dough pizza base, this flatbread pizza certainly tastes like heaven.

For the prep, shred chicken breast and stir fry with sweetcorn, chopped chillies, diced red onion and crushed fresh garlic. Once cooked, add black beans, fresh coriander, salt and pepper and mix together. Add barbecue sauce of your choice, a tablespoon of fresh lime juice and mix again until all the ingredients are covered evenly. Spread over the flatbread base, grate cheddar cheese over the top and cook until the base is crisp and the cheese has melted. Add a touch more of fresh coriander to finish. Serve with a side dip of smoked chilli mayonnaise.

#5 The Ultimate Mexican

Reverting back to the classic dough pizza base, the Ultimate Mexican is a simple and ever so satisfying pizza idea that will explode flavour in each and every bite.

In a bowl, mix chopped plum tomatoes, crushed garlic, chopped chillies, sweetcorn, salt and pepper with a dash of lime juice. Set this to one side. Peel and de-stone two avocadoes then mash together to get a thick and creamy mixture. Finely chop spring onions, red chillies and fresh coriander to add to the avocado cream with a tablespoon of extra virgin olive oil and fresh lemon juice but be sure not to make this too thin. Spread your tomato mixture over the pizza base, then dollop the avocado cream generously. Crack one or two eggs over the pizza, bake until cooked to your preference, serve and of course… Enjoy!
