Cedar wood plank
100g light muscovado sugar
100ml orange juice
250g fresh cranberries
Wood planking camembert makes an indulgent, tantalising treat. You can use the wood planking technique for anything to add an aromatic woody and smoky ﬂavour to your barbecue style food.
Before you begin this recipe, ensure that you soak your plank in water for about 24 hours.
You will want to begin by making a ﬁre in your chimenea or ﬁrepit and letting the heat rise and flames die down.
Once the fire is ready, you will need to make your cranberry sauce. To do this, combine the sugar and orange juice in a pan then bring to the boil over the embers. Once boiled, stir in the cranberries and once they are tender but still holding their shape (8-10 minutes), remove from the grill and leave to thicken and cool.
Then, place the camembert onto the plank and place the plank straight onto the grill over the ﬁre.
You will want to cook the camembert until it is soft melted gooey goodness. This should take about 15 minutes.
Serve with a good helping of your homemade cranberry sauce! De-lish!
Don’t forget your bread to dip so place some onto the plank while the camembert cooks!
TIP! Experiment with other woods such as oak, cherry or maple!
