2 chicken breasts
1tsp smoked paprika
6 soft tacos
15 cherry tomatoes
1 bunch coriander
1 red chilli

These Chicken Tacos With Smoked Chilli Mayo make the ultimate feast to cook over the fire for your loved ones. We paired up with our friends at Gran Luchito to bring you this healthy, barbecue style Mexican recipe, which can be adapted to suit the flavours you love.
Firstly, begin by cutting the chicken into long strips. Secondly, mix the chicken strips with the smoked paprika and a small glug of olive oil. Finally, cover with Clingfilm and leave to marinade in the fridge for a few hours.
While the chicken marinades, finely chop the coriander then slice the tomatoes along with red chilli. Place into separate bowls or onto a board so that everyone can build their own tacos.
Now you need to light a wood fire in your chimenea and wait until the flames die down. (Note that your chicken may burn on the outside if you cook over flames). Grill the chicken over the hot embers until charred and cooked through.
Serve everything straight away with a squeeze of lime, lashings of Gran Luchito’s Smoked Chilli Mayo, dollops of soured cream and a sprinkling of feta cheese.
