Ingredients

1 tin cannellini beans
Bacon
1 large onion
2 garlic cloves – crushed
2 tins chopped tomatoes
2 tbsp tomato purée
150g soft dark brown sugar
200ml red wine vinegar
500ml water
Salt and pepper
Olive oil / coconut oil
Paprika

Method

These homemade beans on toast are a delicious healthy treat that you can cook over a wood fire. Perfect for camping and alfresco cooking, enjoy them as part of a healthy balanced breakfast, lunch or dinner.

Begin by building a fire in your chimenea or firepit. Let the heat build and flames die down.

When your fire is ready, heat some coconut or olive oil in a pan over the heat. chop the bacon into small pieces, then pop into the hot oil in the pan. Fry until the bacon is crispy then remove from the pan and set aside for later.

Chop and brown the onions, then add the garlic, chopped tomatoes, tomato purée, the brown sugar, paprika, red wine vinegar, water and season with salt and pepper. Stir until the sugar has dissolved.

Wash the beans thoroughly, then add to the bean sauce. Leave to simmer for approximately 20 minutes, heating the beans through.

Place some pieces of sourdough bread on the grill and toast while the beans are simmering.

Then, pour the hot beans over the toast. Pop the bacon back into the pan to coat in left over sauce, then tip the bacon chunks over your homemade beans on toast!
