4 tbsp clear honey
1 tbsp soy sauce
2 garlic cloves, crushed
4 chicken breasts/quorn pieces,
cut into 2.5cm (1") cubes
Burgers and sausages might be barbecue staples, but why not try grilling some honey glazed chicken or vegan skewers?
(NB. For this recipe, we opted for the vegan option but you can use either chicken or quorn, depending on your own preference).
Begin by cutting the chicken into 1 inch cubes and thread onto the skewers.
Mix the honey, soy sauce and crushed garlic cloves together before spreading over the chicken. (Alternatively, you can marinate the chicken pieces for a couple hours before threading onto the skewers).
Cook on a medium-heat barbecue, or under a preheated grill for 12-15 minutes, turning several times until the chicken is browned and cooked through.
Add salt and pepper to taste and set aside.
Serve with a rice or fresh green salad.
For additional colour and flavour – add some peppers, onions and mushrooms to your skewers.
If using wooden skewers, soak them in cold water first, otherwise they could burn when under the grill. If you forget, then shield the ends of the skewers with foil.
